4.5 cups of sugar, 1 cup corn starch, 3 teaspoons cinnamon, 1/4 teaspoon nutmeg, 10 cups water. Mix all together and cook until thick and bubbling. Add 3 tablespoons lemon juice, 1 tablespoon salt, and 5 - 9 pounds of peeled and sliced apples. Heat thoroughly. Put in clean quart jars leaving 1 inch headroom. Cold pack for 30 minutes. Makes 7 to 10 quarts
